Teriyaki Chicken over Rice

This recipe is to my knowledge un-tested. it was one that was had written in my recipe book so we must have used it at one time and liked it.. we are making it today 9/16/18 so I will have to follow up when we do.. it is as is where is for now.

Directions: De-fat the chicken and cube. cook in an oiled fry pan until fully cooked (I prefer mine seared on the outside as well).  In a separate pan, mix remaining sauce ingredients over medium heat and bring to a boil while stirring constantly.  Boil for 2 min.  After the 2 minutes, pour over cooked chicken. Add the Optional adds and serve over rice.

Sauce
1/2 Cup  Soy Sauce
1 1/2 Cup Water
1 Cup Sugar
2 Chicken Breasts

Rice:
1 1/2 Cups Rice
3 Cups  Water

Optional adds to liking:
Carrots
Onions
Bell Peppers
Pineapple

My Famous No Bake Cookies

This is a recipe I have been modifying for years to get it just right. The butter and peanut butter variations may make the cookies more Dry or Moist.

You will need:
2 Cups Sugar
1/2 Cup Butter (margarine spread)
1/2 Cup Peanut Butter
1/2 Cup Milk (I use skim) (for vegan use cocunut milk)
1 Cup Semi-Sweet Chocolate Chips (for vegan use vegan chocolate chips)
1 Tsp Vanilla Extract
4 Cups Quick Oats

Procedure
-Mix sugar, Butter, Peanut butter and Milk in a large pot. Place on a burner on HI until it comes to a boil (stirring constantly)
-Turn heat down to Medium and add the chocolate chips bring back to a boil (stirring constantly) for 1 minute
-Remove from heat and mix the Vanilla in.
-Add the quick Oats and mix until oats are covered completely.
-Place balls (sized to your liking) of cookie mix sheet or tray and place in refrigerator until stiff.
-Lick any access out (you are the cook and you earned it)
ENJOY!

GF Sween-n-Sour Chicken

An easy dinner that was a winner with the entire family. Common ingredients, and not too complicated

Ingredients:

Rice
—–
Rice
1 ½ cups white rice
3 cups water

Chicken
—–
3 Large Chicken Breasts

Sauce
—–
3/4 cup (6floz) Pineapple juice (and juice from tidbits)
1/2 cup white vinegar
2/3 cup water
1 cup brown sugar
2 Tbsp cornstarch
4 Tbsp catsup
Hot sauce (optional I have never tried it with this.. fyi)
Salt to taste (I don’t use salt)
Veggies
1 small can pineapple tidbits
¼ – 1/2 Diced Onion
¼ Sliced Bell pepper (we like Yellow or Orange)

—————–Trying another version for sauce———-

  • 1 tbsp cornstarch
  • 1/4 cup water
  • 1/2 cup cider vinegar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup ketchup
  • 1 tbsp soy sauce

Directions:

  1. Place all ingredients in a medium saucepan over medium heat.
  2. Whisk to combine.
  3. As it starts heating up, keep whisking constantly until it thickens into a sauce consistency. It will thicken as it cools. Adjust sweet with sugar, tang with vinegar, saltiness with salt to taste.

Procedure
you will want to time 1,2 and 3 so that they are ready at the same time for #4
1- Get the rice started – Mix 1 ½ cups rice and 3 cups water and cook (We use a rice cooker although it can be done in a pot… somehow  🙂

2- Start the chicken Cooking – De-fat the chicken, cut into cubes, place in a large saucepan on Med-Hi (use oil as desired) until fully cooked (we like it cooked well)

3- Prepare the sauce – In a small pot, whisk together (all of the sauce ingredients) pineapple juice, white vinegar, water, brown sugar, catsup, hot sauce, salt and cornstarch and bring to boil until mixed well.

4- Pour sauce over cubed chicken (still in the saucepan) and let simmer on low until ready to serve

5- Dice up Onions, bell peppers

6- Sauté onions in a small saucepan. Add peppers and pineapples

Serve
Simply stack it up: Rice – sautéed veggies and fruit – Chicken sauce – ENJOY!

Because of our love for Asian foods and restrictions of Gluten Free, we found and altered this recipe and it turned out awesome. I do often add sautéed asparagus on the side for color.

I am adding more to the site once again!

I know, I know, this has become a trend, as I have found things that I want to share but just do not have a good place to share, where I can easily find them again so, it is what it is..

In this case, I am adding Recipes.  More because I am finding that I like certain recipes but some need altering to fit our needs or tastes better.  I have also found that my wife’s cook books are getting to be difficult to use.

I will try to filter these recipes into categories that will make finding one easier by the category menu or searching in the search engine for example you want to make a dinner and you need to use Chicken..  enter “dinner chicken” and you would be able to find any  recipes that I have that meet that detail.

I will also say this – THERE IS NOT SCHEDULE! we are already posting 3 times a week and cannot guarantee a consistent post.
